Introduction

This is by no means a low calorie item, but it is really yummy and completely Dairy and Gluten Free. I made this for a holiday treat. Ingredients

    I Can't Believe It's Not Butter, Regular Spread (2 Sticks), 1 cup
    Egg, fresh, 1 large
    Brown Sugar, .5 cup, packed
    Almond Paste, 7 oz (3/4 of a 10 oz. package)
    Vanilla Extract, .5 tsp
    *Quinoa flour, 1 cup
    *Bob's Red Mill Gluten-Free All-Purpose Baking Flour, 1 cup
    *Xanthan Gum, 1.5 tsp
    *Chocolate Chips, Enjoy Life Allergen Free, 1/2 package
    *Tofutti Better than Cream Cheese (Immitation Cream Cheese), 4 tbsp (.25 cup)
    *cant believe its not butter, 2 tbsp
    Vanilla Extract, .5 tsp

Directions

Preheat oven to 350. Combine the first 8 ingredients to make the crust. Line a 9x13 in baking pan with tin foil, press the dough mixture into the bottom of the pan - bake for 8-12 mins. Once the Crust is baked and slightly brown, let cool for a few minutes then spread with chocolate mixture prepared as follows: Combine Chocolate chips, cream cheese, butter and vanilla in a microwave safe bowl. Microwave for 1-1.5 mins - stirring halfway through.

Layer with your favorite toppings, Coconut, slivered almonds, Raspberry topping etc.
