Ingredients

    1 onion
    2 tsp crushed garlic
    2 tbsp olive oil
    1 small red pepper
    1 lb ground chicken breast (99% fat free)
    1/2 head cauliflower
    1 tbsp dried basil
    1 cup low-sodium chicken broth
    1/4 tsp celtic sea salt
    1/4 tsp saffron
    1/4 tsp cajun seasoning
    1/8 tsp cumin

Directions

Sautée onion, red pepper and garlic in 2 tbsp olive oil. Add cauliflower when onion starts to get translucent. Then add the chicken. Cook over high heat. Add sea salt, saffron, cajun seasoning, cumin, and broth and stir as the mixture cooks, until broth turns yellow from the saffron. Reduce heat to simmer, let simmer about 10 minutes, stirring frequently and making sure the mixture doesn't dry out. Turn to low and cook another 10 minutes. Serve over white or brown rice, and garnish with avocado if desired.

Makes 6 1-cup servings.

    This was great!! I usually dont eat cajun anything because I dont like hot & spicy stuff but after reading the ingredients I just had to try it. I will definitely fix this dish again. - 12/30/09

    I really liked the flavor, I did add some frozen spinach, and my kids loved it. - 9/20/10
