Ingredients

Eggs
Croutons (fat free if possible, doesnt matter what flavor)
Butter (light or smart balance)
hash browns, thawed
shallot (1 small)
any deli meat (i used land o frost turkey) or sausage
light or fat free cheese (sargento reduced fat italian)
Milk - fat free
and herbs and spices i used cayenne pepper, mrs dash table blend, oregano and chili powder
Directions
Makes 8 servings in a pie plate.
Preheat oven to 400
Melt butter, and crush croutons. Mix together, and place in greased pie pan, making a crust.
Cut up shallots and turkey (and other veggies you will put in the quiche)
In a bowl, whisk eggs, milk and the shallots and turkey and spices.
Place the hash browns on top of the crust, and smash down until flat. Add the cheese on top of that.
Pour egg mixture over the cheese and hashbrowns, and make level.
Put some foil over the crust, because the croutons will burn at that temperature.
Bake for about 35-40 min. until the egg is solid. (the liquid is no longer runny on top)
Serve while hot! I put a little ketchup with mine :-)
