Number of Servings: 12

Ingredients

    1 pk yeast
    1 1/2 cup warm water
    3 cup flour (can use white whole wheat flour for healthier pita's)
    1 1/2 tsp salt
    1 tsp sugar
    1 tbsp olive oil

Directions

Dissolve yeast in 1/2 cup warm water
Add sugar - stir lightly - let sit for 10-15 min
In bowl add 3 cup flour
Add yeast mixture to bowl began mixing with wooden spoon while gradually adding 1 cup warm water as you mix

Place dough on working surface, and knead for 10-15 minutes until dough is elastic
Coat large bowl with olive oil
Place dough in bowl and turn to coat with oil also
Cover bowl with towel and place in warm place for 1 hour while dough doubles in size

Roll dough in long rope
Cut into 12 small pieces
Roll each piece into ball
Roll out each ball till about 5-6 inches round and 1/4 inch thick
Preheat oven to 500 degrees
Place rack at bottom of oven
Place glass baking dish into oven to warm
Place a circle of dough on each side of baking dish at a time
Bake 4 minutes or until it puffs up
Turn
Bake another 2 minutes or until brown
Remove with spatula to cool rack
Place two more till all are done
**Pita may be stored in ziplock bag up to 1 week in fridge or bread pantry or up to 1 month in freezer**
