Ingredients

    Pumpkin, canned, without salt, 1.75 cup
    Wheat flour, enriched, .25 cup
    Egg, fresh, 1 medium
    Torani Sugar Free Flavored Syrup, 3 oz
    unflavored protein powder, 1 scoop
    Vanilla Extract, 1 TSP
    Allspice, 1 TSP
    Oats, .25 cup

    For a sweeter version, add to taste:
    Sugar Free, Fat Free Cool Whip (optional)
    Honey, (optional)
    (neither are in calorie totals)

Directions

Mix one 15oz can of pumpkin with your favorite sugar free Torani syrup for sweetness (I use SF Cookie Dough or SF Kahlua flavors), and gently blend in the rest of the ingredients, except oats. Mix until smoooth. Spray the mini muffin pan with non-stick cooking spray. Spoon 2 tablespoons of mixture into each mini muffin. Sprinkle oats over the top of each muffin. Bake at 375 for 15 minutes. Once cool, top with honey or fat-free sugar-free Cool Whip for a sweeter treat!

    These came out REALLY soft, almost a pumpkin-pie consistency, but they were also SUPER DELICIOUS!!! Thanks for the great recipe! I'm glad I didn't throw the batch out when I thought they were underdone and tried one, because boy, are they good. - 2/17/12
