Ingredients

    2 Tbsp Extra Lt Olive Oil
    1 Tbsp Unsalted Butter
    4 Boneless, Skinless Chicken Breasts, cut into bite-size pieces
    1 Pkg Smoked Turkey Sausage, cut into 1/2 inch pieces
    1 box (32 oz) Organic Vegetable Stock
    1 box (32 oz) Organic Chicken Stock
    1 Large Onion, Chopped
    3 Garlic Cloves, minced
    1 Cup Celery, diced
    1 tsp Red Pepper Flakes
    1 tsp Thyme
    2 Tbsp Parsley
    1 tsp Ground Cloves
    2 Tbsp Basil
    2 Large Bay Leaves
    1 tsp Tabasco Sauce
    1 Cup Brown Rice
    1 Cup Frozen Spinach

Directions

Heat oil and butter in large skillet; add chicken & cook until browned. Remove chicken to large pot. Add onion, garlic & celery.. cook until soft. Add to chicken in pot. Add all other ingredients (except spinach) and simmer until rice is cooked. Add frozen spinach; cook additional 10 minutes or until spinach is heated. Add salt to taste, if desired (not included in nutrient calculation).
