Ingredients

    1 tsp sunflower oil
    1/2 small red onion, very finely diced
    1 plum tomato, seeded and very finely diced
    1 jalapeno, deseeded and thinly sliced
    pinch of turmeric
    1/2 tsp cumin seeds
    2 Tbsp chopped cilantro leaves
    2 large eggs, lightly beaten
    1/2 tsp salt

Directions

Heat the oil in a medium, nonstick frying pan. Mix together all the ingredients and pour into the pan. Cook over medium heat for 3-4 minutes, or until the base of the omelet is lightly browned. With a spatula, carefully fold over the omelet, press it down lightly with the spatula and cook for 2-3 minutes. Flip over the omelet and cook for another 2-3 minutes or until it is cooked to your liking. Remove from heat and serve immediately with warm crusty bread or roll it up in a warm chapati.
