Introduction
I altered my tried and true banana bread recipe so that I could serve it to my neighbors, who are vegan. I altered my tried and true banana bread recipe so that I could serve it to my neighbors, who are vegan.Number of Servings: 24
Ingredients

¼ cup + 2 Tbsp vegetable oil
1 C. sugar
2 tsp flax meal + ½ cup water (blended together, acts as egg replacer)
2 C. flour
1 tsp baking soda
2 Cups ripe mashed banana
Directions
Preheat oven to 345 degrees. F. Cream oil, sugar and flax meal, water mixture*, together. Add water and bananas. Mix in flour & soda.
Grease and flour bread pan. Bake until done, when knife or fork comes out clean, (appx. 1hr 20min to 2hrs). May have to cover with foil to prevent burning. If splitting batter into 2 smaller loaves, you only bake for about 45 min.
Servings: Slice bread loaf into 12 even slices, then cut lengthwise down then entire loaf, dividing it into 24 slices. Or separate into 2 loaf pans and cut each loaf into 12 even slices.
