Ingredients

    Makes 12:

    1 cup dry lentils
    2 1/2 cups water
    1 bay leaf
    1/2 cup diced onion
    1/2 cup diced celery
    1 tbs vegetable oil
    1 tbs chopped fresh tarragon
    2 tsp chopped fresh marjoram
    1 tsp ground cumin
    1/2 tsp dark sesame oil
    1/2 tsp fresh lemon juice
    1/2 tsp salt
    1/4 tsp fresh ground black pepper
    3/4 cup rolled oats (we use oatmeal)
    3/4 cups dry bread crumbs

Directions

In a medium saucepan, simmer the lentils in water with the bay leaf
until the lentil skins split easily (about 45 minutes). Meanwhile,
cook the onion and celery in the oil, stirring, until soft, about 5
minutes. Remove from the heat and stir in the remaining ingredients
except the oats and bread crumbs. Process the oats in a blender or
food processor until finely ground. Combine the oats and bread crumbs
with the lentil mixture (retaining the water the lentils were boiled
in). Shape the mixture into 12 patties. (You may freeze the patties
at this point.)
Bake at 375 until firm.

    Very Good
    my husband gave it two stars, but i think it is better. I added a couple of tablespoons of salsa and an ounce of monterey jack with lettuce and it is tasty! - 6/21/07

    Not incredible. But definitely filling and kind of yummy. I added salsa and jack cheese as well. Yeah, a second chance was well deserved for this yummy treat! - 6/21/07
