    1 tablespoon olive oil
    1 cup chopped onion
    1 cup chopped celery
    4 (14.5 ounce) cans chicken broth or boullion
    12 oz. chopped cooked chicken breast
    8 oz egg noodles
    1 cup sliced carrots
    1 teaspoon dried basil
    1 teaspoon dried oregano


In a large pot over medium heat, melt butter. Cook onion and celery in butter until just tender, 5 minutes. Pour in chicken and vegetable broths and stir in chicken, noodles, carrots, basil, oregano, salt and pepper. Bring to a boil, then reduce heat and simmer 20 minutes before serving.

    I have made this several times and find that it is equally delicious by substituting the noodles for 3/4 cup quick cooking barley. Yum. - 1/19/13

    This was my best homemade chicken soup! I made my own broth and had exactly the amount I needed for this recipe. I didn't change a thing! YUM! - 1/19/11

    I have never made home made soup till today. My husband and I both loved it and because the recipe made 12 servings I was able to freeze two containers for two more meals. How great is that!!! Try it - you will love it!! - 11/29/10
