Ingredients

    Lamb, Cubed, 1 lb
    *Potato, raw, 2 cup diced
    Carrots, raw, 1 cup, chopped
    Peas, frozen, 1 cup
    Onions, raw, .25 cup, chopped
    Celery, raw, 2 stalk, medium (7-1/2" - 8" long)
    Red Wine, 8 fl oz
    Olive Oil, 1 tbsp
    Water, tap, 4 cup
    Rosemary, dried, 1 tbsp
    Thyme, fresh, 1 tsp
    *Whole Wheat Flour, .125 cup

Directions

Dredge lamb cubes in flour, brown in skillet with one Tbsp olive oil.
Add all ingredients except wine to crockpot. pour 1 cup of wine into skillet to deglaze pan, add to crockpot.
cook on low 6-8 hours

    I really liked this. Lamb is really rich. I took the lamb and weighed it in portion sizes and put each in separate containers so I wasn't eating more protein than I should. - 3/24/11
