Introduction

This salad is FULL of flavor and very nutritious. This salad is FULL of flavor and very nutritious.
Number of Servings: 1

Ingredients

    3 oz . Boneless, skinless chicken breast
    1 oz. Lime juice
    1 Tbsp. Stubb's Chile Lime seasoning
    1/2 tsp. ground cumin
    Dash of Adobo seasoning

    1 1/2 cup Romaine lettuce
    1/2 cup Spinach
    1/3 cup Canned black beans (drained, rinsed)
    3 tbsp salsa
    2 tbsp fat free sour cream
    1/4 avocado (sliced)
    1 oz. Tostitos light tortilla chips



Directions

Cut up chicken into chunks and brown in a pan using cooking spray. Add lime juice and spices and continue cooking chicken until done.

Toss romaine and spinach in a big bowl. Add chicken chunks, black beans, salsa, sour cream, and avocado cut into slices. Sprinkle with crushed tortilla chips.

This recipe makes one BIG salad for one person.

    Awesome! Added hot sauce for extra heat! This is the kind of recipe that keeps you going on your way to your goal, knowing that you don't always have to give up on those fireworks kinds of flavors to get healthy. Fantastic! - 8/20/10

    Excellent recipe. My wife and I much prefer dark meat. I substituted boneless chicken thighs which are smaller than the breasts. It was still plenty. I didn't have any Stubb's so I browned the chicken then sprinkled Chile powder over it and the Cumin and then the Lime juice and reduced. Fabulou - 1/23/10
