Ingredients

    Sour Cream, reduced fat, 4 cup
    Cream of Chicken Soup, 4 can (10.75 oz ea.)
    Hot chile pepers, 1 cup
    Shallots, .5 cup chopped
    Chicken, light meat, 4 cup chopped or diced
    Monterey Cheese, 8 oz
    Cheddar Cheese, 8 oz
    Flour tortilla, 8 inch, 26 servings

Directions

Mix sour cream, soup, chiles and onions. Mix cheddar and jack cheeses. Mix chicken, a little cheese, and 2/3 cream/soup filling. Put some in each tortilla. Roll up and with seam-side down, line bottom of casserole pan. Sprinkle remaining cheese on top. Bake at 350 for at least 30 min.

    I made this last night for the second time, instead of soup mix I just used the sour cream and added some salsa. I alos rinsed off the gree chili to prevent the excess salty taste. It was better than the first time! Great recipe! - 1/29/10

    YUMMY AND VERY EASY. EVEN MY PICKY 9 YEAR OLD LIKED IT! THE ONLY THING I CHANGED WAS I BOILED THE CHICKEN WITH 6 PIECES OF CHICKEN BULLION CUBES...TO ADD MORE FLAVOR TO CHICKEN! THANKS FOR THE RECIPE! - 1/7/10
