Number of Servings: 2

Ingredients

    1/2 T. Canola Oil
    4 C. Broccoli, chopped
    4 Small Onion, Halved and sliced
    2 tsp. Cayenne Red Pepper Flakes
    2 Eggs
    8 Egg Whites
    1/4 tsp. salt
    1/2 tsp. cracked pepper

Directions

Preheat oven to 350 degrees. In a preheated non stick skillet on high heat place Canola Oil. Immediately add onions and caramelize (reduce heat slightly). Add broccoli, cook 2 minutes and then add red pepper flakes. Remove from heat. Meanwhile, add eggs and egg whites and beat until frothy. Add salt and pepper to eggs. Pour over vegetable mixture and cook in oven until set. (approx 10-15 minutes). Serves two.

    Really good. Made before a trip to use up egg whites and fresh veggies I had on hand. Added mushrooms and a can of stewed tomatoes. - 3/3/13
