Introduction

Spicy Baked Version! Spicy Baked Version!
Number of Servings: 4

Ingredients

    * Bread crumbs salt free 1/3 cup, 2 servings

    * Ginger, ground, 1 tsp and or fresh grated Ginger Root, 2 tsp

    * Orange Peel/zest, 2 tbsp

    * Orange Juice, .5 cup

    * Mrs Dash Lemon Herb Peppercorn or Zesty Garlic Marinade, 4 tbsp

    * wine, white cooking, 2 tbsp

    * Sweet potato, 2 medium sweet potatoes, 5" long -cut .into French fry strips. Leave skin on.

    * Paprika, 1 tsp and Pepper, black, 1 tsp
    or 1 capfull of Mrs. Dash Extra Spicy blend

    * Olive Oil, Extra Virgin, 1 tbs or Pam Spray

    * fish/Pollock filets/ Matlaws 4 oz -1/4 bag, 16 oz

Directions

Sweet Potato Fries:
Pre-heat oven to 350.
Spray or coat two cookie sheets with oil or Pam
Cut sweet potatoes into even sized French fry strips.
Spread potatoes evenly out on cookie sheet.
Spray potatoes with a light coating of Pam
Sprinkle Paprika/Pepper or Mrs Dash Extra Spicy over fries and place on bottom rack in oven for 15 minutes. Check once or twice.

Orange Ginger Fish
Mix bread crumbs, ginger, orange zest in plate or ziplock bag set and aside.
Mix orange juice, wine and Mrs. Dash marinade together in marinade in covered bowl and place fish into bowl. Cover and swish around so all pieces of fish are covered in mix.
Then dredge the fish in the bread crumb mix until lightly covered.
Place fish on other cookie sheet and place in oven above sweet potatoes.
Flip sweet potatoes over at this time to cook other sides.
Leave everything in for about 10 minutes.
Check fish for browning and carefully turn over to bake other side.
Continue to brown/bake fish and potatoes for another 5 to 10 minutes until crispy.
Put everything on paper towel covered plates and serve!
