I cut out the oil and use the broiler instead of the stovetop (seems to cook and brown better this way.) Ingredients

1/2 Cup Bread crumbs
1 tsp basil
1 tsp lemon peel
1/2 tsp garlic powder
1/2 tsp salt
6 (total 1lb) tilapia fillets
Cooking spray
Directions
Thaw fillets before cooking.
Mix all ingredients except fish in a bowl. Rinse each fillet and coat with breading.
Preheat Broiler on low. Spray baking pan with non-stick cooking spray. Place fish in baking pan and spray the top of each fish with the cooking spray.
Broil for 6-10 minutes, turn over once and cook for another 5-8 minutes.
Makes 4 4oz servings.
