Ingredients

    Package of lean turkey sausage
    Box of pasta (recipe uses Dreamfields rotini)
    Jar of Pasta sauce (here using Classico marinara)
    lb shredded low-fat mozzarella cheese
    Half pound mushrooms
    Onion
    Red wine to taste
    Olive oil for frying
    Seasoning to taste -- I like Basil, Oregano, Garlic, and Thyme

Directions

Makes 8 servings

Chop the sausage, mushroom, and onions. Brown all three in olive oil.
Cook the pasta (err on the side of undercooking)
Mix all everything except ~ half the cheese in a baking dish. Sprinkle the remaining cheese on top.
Cook 30 minutes at 350F or until cheese is bubbly and brown.
