Number of Servings: 6

Ingredients

    Olive Oil, 1 TBS
    Onion, 1 medium chopped
    Celery, chopped
    Carrot, 1 large chopped
    2 garlic cloves, minced (I use the jar type)
    1 can chickpeas, rinsed and drained
    zucchini or yellow squash, 1 medium chopped
    vegetable broth, 6 cups
    Ditalini, 1/2 cup raw = 1 cup cooked
    1/2 cup pesto (I use store bought)



Directions

Cook onions, carrots, celery and garlic in oil in skillet.
Add all ingredients except the pasta and pesto sauce to the slow cooker.
Cook on low for 7 to 8 hours.
Just before servfing, stir in pesto and 1 cup cooked ditalini pasta. Enjoy!
