Ingredients

5 cups cooked beans (2 black, 1 kidney, 1 great northern)
1 full egg, 2 eggwhites
1/5 cups matzo meal
1 tbsp olive oil
1 medium onion, diced finely
2 garlic cloves, minced
.5 green bell pepper, diced
1 tsp cumin
Directions
Place 1.5 cups of black beans in a large bowl. Process the remaining cup of beans with the eggs until smooth. Stir this into the whole beans along with the bread crumbs.
Heat the oil in medium skillet over medium heat. Add onion, garlic, and bell pepper and sautee until very tender and beginning to brown. Add spices, cook another minute.
Put veggies into bean mixture and stir well.
Preheat oven or skillet to 375.
Using 1/3 measuring cup, scoop up 12 portions of bean mixture and place on sheet. Flatten out with hand.
Bake 10 minutes, flip and bake 10 more--or skillet one side until moisture is gone and then flip.
Eat with salsa =)
