Cooking the onions with the flour and cream make each bite a revelation....You can leave the ham out and substitute carrots instead.

Ingredients

    148 grams Russet potatoes thinly sliced (6 cups)
    3 Tbsp All Purpose Flour
    3 Tbs Butter
    1 med Onion thinly sliced
    1 tsp Salt
    2.5 cups Half and Half
    1.75 cup Ham sliced
    1 tbs dry bread crumbs
    1 Tbsp Butter in cut into small cubes (to dot on top )

Directions

Heat oven to 350
Spray 2 quart Covered Casserole w/ cooking spray
In 2 quart sauce pan melt 3 tbs butter over medium heat. Cook Onion in butter about 2 minutes stirring occasionally, until tender. Stir i flour salt and pepper. Cook stirring constantly until smooth & well combined. Stir in half & half slowly again until well combined. heat to boiling, stirring constantly. Boil & stir one minute.

Layer potatoes & ham in casserole distributing the ham so that it is proportionate to each serving & pressing down gently to make surface even. Pour sauce over potato mixture gently shake pan to allow the creamy mixture to seep into the layers evenly. Cut butter into small pieces; Sprinkle bread crumbs over top evenly, lastly sprinkle 1 tbs butter over potatoes.

Cover bake 30 minutes.
Uncover and continue to bake one hour up to 1 hr 15 minutes longer depending on your oven, until potatoes are tender.

Let stand 5 to 10 minutes before serving.

Serve with fresh Green Beans!

    I'm usually not a scalloped potatoes and ham kinda girl but this recipe was pretty darn good! my mom and i concocted this recipe tonight to use up our left over ham from the holidays and i say it was good. in my opinion next time we make this maybe we'll sprinkle some grated Gruyere cheese on top - 1/11/10

    Using fat free cream is an option it does taste very good, no need to use bread crumbs this can cut calories - 9/16/11
