Ingredients

3 egg whites
1/2 tsp salt
1/2 tsp vanilla
1/2c + 2T cocoa powder
1oz bittersweet chocolate, finely chopped or grated
1 1/2c powdered sugar
Optional: finely chopped pecans
Directions
Preheat oven to 300. Line cookie sheets with parchment paper.
Combine dry ingredients. Whisk in egg whites, one at a time. Beat on high 1 minute after last egg white. Stir in pecans, if using.
Drop by tablespoons on lined cookie sheet. Leave at least 2in between cookies. Bake 15 minutes. Cool completely before peeling off parchment.
