Ingredients

    2 boneless skinless chicken breasts, cooked and chopped
    1 large bag frozen mixed vegetables
    1 can 98% fat free cream of chicken soup
    8 oz low fat sour cream
    1/2 cup chicken broth
    seasonings to taste - I use Italian seasoning, salt, and pepper
    1 refrigerated pie crust

Directions

Cook and chop chicken. Steam frozen veggies just til thawed. Mix chicken, veggies, soup, sour cream, broth, and seasonings. Spread in 9 x 13 pan. Cover with refrigerated pie crust and bake at 350 degrees until pie crust is browned. Approximately 1 hour.
