Introduction

A friend made this for our tennis holiday party and I fell in love. I wanted to figure out the calories and figured it really is delicious enough to share! Ingredients

    Spring Mix greens
    Pancetta
    Craisins
    Blue Cheese crumbles
    Pine Nuts
    Fat Free Poppyseed Dressing

Directions

Toast Pine Nuts under broiler for a couple of minutes.
Dice Pancetta and brown in skillet until crispy, drain on paper towels.
Toss all ingredients in a salad bowl! Drizzle dressing lightly... you might not want 4 tablespoons, 2 might do...
This makes about 6-8 servings.
