Ingredients

    3/4 cup zucchini ,diced
    1/3 cup bell pepper,choped
    1/4 cup onion,chopped
    4 oz. turkey breast,cut in bite size pieces
    1tbsp dried parsly
    1 tsp garlic ,chopped
    1/2 tsp ginger finely grated
    1/2 tbsp soy sauce
    1tsp apricot preserves
    1 tsp peanut butter

Directions

spray skillit or wok with non stick spray.add vegtables and parsley .stir a min or two,add turkey and cook till done.Stir preserves,peanut butter,ginger,soy sauce and 1/4 cup water together.pour over all and cook down some to make a sauce.Add pineapple at end just till heated through.I serve over brown rice.
