Introduction

This recipe is from Not Your Mother's Slow Cooker Cookbook.

If you have an apple peeler the prep time will be significantly reduced. It took me about an hour to manually peel and core (using an apple slicer) 10 medium sized apples.

This applesauce has just a hint of orange flavor to satisfy a sweet craving.

Sugar can be added as the last step if preferred, not included in the nutrition information (it was sweet enough as is).

Ingredients

    8-10 Apples, peeled and cored
    2 tbsp Lemon Juice
    2 tbsp Water, as needed
1 Orange, zest strips (leaving the white pith behind)
    Sugar to taste

Directions

Place peeled and cored apples in slow cooker. Mix with lemon juice and orange zest. If the apples seem unusually dry, add the water to the cooker. cover and cook until the apples are extremely tender and falling apart, on HIGH for 3 to 3 1/2 hours or on LOW for 5 to 6 hours.

Remove orange zest and puree apples in a food processor, or with a handheld immersion blender in the cooker.. For a chunky applesauce, mash apples with a meat tenderizer. Serve immediately or refrigerate for later use. The applesauce will keep, tightly covered, for 2 weeks in the refrigerator.

Makes 8 1/2 cup servings.
