Ingredients

    8 whole wheat tortillas (8 inch)
    8 oz light cream cheese
    10 oz canned chicken breast
    1 can black beans (rinsed and drained)
    1 tsp red pepper flakes
    1 tsp chili pepper
    1 tsp dried onion flakes
    2 can tomato sauce
    6 tsp chili powder
    1/2 cup shredded cheddar cheese

Directions

Mix chicken, cream cheese, black beans, red pepper flakes, 1 tsp chili pepper, and onion flakes. Spoon evenly onto tortillas and roll tortillas burrito style. Place seam side down in a 9x13 pan. mix tomato sauce, 6 tsp chili powder and one can water. Pour over enchiladas. Sprinkle with cheese. Bake uncovered at 350 degrees for 30-35 minutes or until hot.

    Super good!! I left out the red pepper flakes since I was cooking for my 2 and 7 year old, too, but upped the chili powder a little bit. They both loved it!! - 9/28/10

    I had to play a little with this cause I was making 16 Enchiladas so I doubled up on all but I also added some Diced Jalapeņos. & Since I am Spanish of course some Adobo & Sazon. But this was an easy recipe & delicious. - 5/5/13
