Ingredients

    2 pounds unpared red potatoes
    2 Tbsp canola oil
    2 1/2 Tbsp cider vinegar
    2 Tbsp finely chopped onion
    1/4 cup finely chopped green bell pepper
    3/4 cup finely sliced celery
    1 tsp salt
    1/2 tsp dried dill weed
    3/4 cup mayonnaise

Directions

Boil potatoes in jackets until tender; drain, cool, peel and dice. Mix oil and vinegar with a whisk in large bowl, add potatoes and toss until well coated. Add remaining ingredients, mix well. Refrigerate for several hours. Serve on lettuce leaves. Serves 6 - 8 (nutrition calculations based on 6 servings).

    I have this recipe from an old mc calls cookbook but instead of dill weed I use dill seeds. This is the best potatao salad I have ever made. - 12/19/11
