Introduction

Basic quick sauce I make in pressure cooker. I have this with shrimp, or can add sausage or ground beef. Basic quick sauce I make in pressure cooker. I have this with shrimp, or can add sausage or ground beef.

Ingredients

    1 medium onion, diced
    1 stalk celery, diced
    2 cloves garlic, minced
    2 tbsp olive oil
    1 (28 oz) can Diced tomatoes
    1 tbsp Italian seasoning (to taste)
    1/2 tsp hot pepper flakes (to taste)
    1/4 tsp salt
    1 bay leaf
    1/2 c water
    2 c sliced mushrooms


Directions

Saute onion, celery and garlic in olive oil in pressure cooker. Add tomatoes, water, seasonings and salt. Bring to pressure and cook 10 minutes. Add tomato paste. Saute mushrooms in a bit of olive oil, add to sauce. Serve over pasta by itself, with Parmesan, shrimp, sausage, or whatever. Makes about 6 cups of sauce, 1 cup per serving.
