Ingredients

    16 oz. 93% lean ground beef
    2 cans fat-free beef broth
    14.5 oz. stewed tomatoes, undrained and crushed
    1 cup chopped onion
    1 tsp. dried thyme
    1/8 tsp. ground black pepper
    4 cups coarsely chopped cabbage
    15 oz. can kidney beans, rinsed and drained

Directions

Brown ground beef in large pot over medium heat, stirring to crumble, until meat is no longer pink. Add remaining ingredients except cabbage and kidney beans, and bring to boil over high heat. Reduce heat to low, cover and simmer for 15 minutes.

Add kidney beans and cabbage and raise heat to bring soup to a boil. Reduce heat to low, cover and simmer for additional 15-20 minutes or until cabbage is tender and flavors are well blended.

Makes 7 servings.

    I used lo-sodium tomato juice instead of stewed tomatoes, and omitted the beef broth to reduce sodium. It was excellent. Even the picky eaters in my family loved it. - 10/24/10
