Ingredients

    1 lb dry Navy Pea Beans
    1.75 c bean liquid
    .33 c brown sugar
    1 tsp salt
    1 tsp dry mustard
    .25 c molasses
    4 oz smoked pork belly
    1 med onion

Directions

Rinse beans well. In 8 cups of water, bring beans to a boil; simmer for 60 mins. When beans are tender, remove from heat. Drain, reserving 1.75 cups of bean liquid. Mix brown sugar, salt, dry mustard and molasses in a small bowl; add bean liquid. Slice a medium onion. Cut pork belly into 1/2 inch cubes. In a covered stoneware crock or bean pot, layer 2 c beans, a layer of onions and a layer of pork; ladle 1/3 sauce; repeat layers. Bake in a slow (300 degree F) oven for 5-6 hours. Makes 10 (approx 1/2 c) servings.
