Low calorie and quite filling - I got this recipe from some site, but have modified it. Ingredients

    1 lb boneless chick breasts - cubed
    1 can (14.5 oz) Italian diced tomatoes (I buy low sodium version)
    6 medium carrots, chopped
    4 celery ribs chopped
    1 large Onion, chopped
    1 medium green pepper, chopped
    1 1/2 c sliced mushrooms
    2 low sodium chicken boullion cubes/packets
    2 tsp Splenda
    1 tsp chili powder
    1/4 tsp pepper
    1 tbs cornstarch
    2 c cold water

Directions

add all ingredients except water and cornstarch to crock pot. combine water and cornstarch, por over other ingredients.
Cook on low from 8-10 hours.

Makes 6 servings
