Ingredients

    2C Flour
    1.5C Whole Wheat Flour
    2tsp baking powder
    2tsp baking soda
    1tsp ground cinnamon
    1/2tsp ground nutmeg
    1/4tsp pumpkin pie spice

    4 eggs beaten
    1(15oz) can pumpkin(not pumpkin pie mix)
    1C canola oil
    1c honey
    2/3c Water
    1 1/2-2C mini chocolate chips

Directions

Preheat oven to 350 degrees

In large bowl combine first 7 ingredients to make a flour mixture.

In seperate bowl combine eggs, pumpkin, oil, honey and water, mix well.

Make well in flour mix and pour in pumpkin mix, mix in and fold gently. Fold in chcoolate chips but don't over stir.

Spray muffins cups with non stick spray. Fill about 3/4 full. Makes about 60 mini muffins.

Cook at 350 degrees for:
mini muffins 12 minutes
regular muffins 20 minutes
