Ingredients

1 cup uncooked brown rice
14 ounce jar of marinated artichoke hearts
1/3 cup diced green pepper
1/3 cup diced sweet onion
1/2 cup black olives
8 ounces cooked turkey breast
1/3 cup Kraft Miracle Whip light
1 teaspoon curry powder
salt and pepper to taste
Directions
Cook brown rice according to instructions on package until tender, do not overcook.
Put cooked rice in a large bowl and add chopped marinated artichoke hearts and the liquid from the jar.
Chop green pepper, onion, and olives and add.
Dice turkey into bite size pieces.
Add turkey, Miracle Whip light, and curry powder.
Add a few grinds of black pepper.
Salt to taste- I don't think it needs any, but I am used to less salt on my food.
