Introduction

Ingredients

    1 small chicken breast , diced (all visible fat removed)
    cooking spray
    1 dash black pepper
    1 dash garlic salt
    1/2 cup canned corn (drained)
    1/2 cup black beans (rinsed and drained)
    4 tbsp salsa (mild, med or hot)
    1 tbsp light sour cream
    1/2 cup cooked brown rice

Directions

-remove any visible fat from chicken

-dice chicken

-sprinkle pepper and garlic salt on chicken

-heat skillet and spritz with cooking spray

-cook chicken in skillet until browned and cooked through.(approx 8 min)

-add beans, corn and salsa to skillet and mix with chicken and cook for 2 min

-remove from heat

-mix in sour cream

-serve over brown rice

-enjoy!
