Introduction

I literally just brown the beef and throw it all into the slow cooker and then live my life. To save time, I usually chop all the veggies in the food processor. Careful with the Italian seasoning mixes...a lot of them list salt as their first ingredient! Serve with whole wheat pasta. Ingredients

    1 1/2 lbs of lean or extra lean ground beef, drained
    2 large tins of chopped tomato
    2 large cooking onions, chopped
    1 large green pepper
    1 zucchini
    about 15 button mushrooms, chopped
    Italian seasonings
    Oregano
    Dried Italian chili peppers (optional)

Directions

Brown ground beef and drain. Add to the slow cooker. Chop all vegetables except the mushrooms. Add tinned tomatoes and chopped vegetables and stir to combine. Add Italian seasoning and oregano to taste. After about 5 hours cooking time, I add the mushrooms and the tomato paste (and red pepper flakes, if you're using them) and adjust seasoning to your liking . Then let simmer for a few more hours. Makes at least 12 one cup servings. Serve over whole wheat pasta. Enjoy!
