Ingredients

2 cups oatmeal, dry
1 medium apple, finely diced
1/2 cup cranberries, finely chopped
1/2 cup (8oz.) fat free Greek Yogurt
1/4 cup Sucralose Sweetener (like Splenda Granular)
1/4 cup water
1/8 cup flaxseed meal
1 tsp cinnamon
1 tsp vanilla extract
Directions
Makes 6 generous squares
Preheat the oven to 350F.
In a small bowl combine 1/4-cup water with 1/8-cup flaxseed meal. Set aside.
Finely dice one apple, and chop the cranberries (easily done in a blender!).
In a medium bowl combine diced apple, chopped cranberries, yogurt and cinnamon. Stir well to evenly distribute the fruit and spice. Stir in sucralose sweetener. Stir in oats. Add in reserved flax/water mixture. Stir well until everything is combined and uniform.
Line a 9"x13" baking dish with aluminum foil or parchment, and spray it with nonstick spray. Using damp hands (so the mixture won't stick to you) evenly press the mix into the prepared dish. Using a rubber spatula or the blunt end of a knife, score the mix into six squares.
Bake at 350 for 25 minutes. Remove bars from the oven, and use the blunt edge of a knife to re-score the bars. Remove the foil or parchment from the baking dish, and replace the bars (on the foil or parchment) directly onto the oven rack. Bake an additional ten minutes. Remove the bars again and flip them over. Return to the oven and bake an additional 10 minutes.
Finally, remove the bars from the oven and place on a cooling rack.
Bars will harden as they cool completely, resulting in a crunchy granola breakfast bar! Enjoy this on the go, or break it into a bowl, add some milk, and enjoy it as cereal!
