Introduction

These are more of a European chocolate rather than a rich U.S. chocolate. You can add a few chocolate chips to each to add a little more flavor and not alter the nutrition too much. Ingredients

    2 cups Splenda
    1-3/4 white wheat flour
    3/4 cup baking cocoa
    1-1/2 tsp baking powder
    1-1/2 tsp baking soda
    1 tsp salt
    2 eggs
    1 cup milk (I used 1%)
    1/2 cup unsweetened apple sauce
    2 tsp vanilla extract


Directions

Preheat oven to 350. Spray muffin tins with non stick cooking spray or line with muffin wrappers.

Combine dry ingredients in a bowl. Add to wet ingredients and blend 2 minutes. Bake for 15 minutes.

For a more rich chocolate flavor I added 5 toll house chocolate chips to each muffin. It only adds about 12 calories per muffin.
