Number of Servings: 6

Ingredients

    1 pounds extra lean ground sirloin
    1 large onion, finely chopped
    2 tablespoons chili powder
    Salt and ground black pepper
    1/2 cup ketchup
    1/4 cup yellow mustard
    1 to 2 cups beef stock (depending on how liquid-y you want it) (1 cup is in calorie calculations)
    1 pound whole wheat elbow macaroni
    1 cup shredded FF sharp yellow cheddar (the sharper the better!)

Directions

Preheat oven to 400 degrees.

Bring water to a boil for pasta and cook until done. Drain.

Meanwhile, brown your meat in a skillet.
Add onion, chili powder and season with salt and pepper and cook until onion is tender, about 5 minutes.
Add ketchup, mustard and beef stock and bring to a bubble and simmer until slightly thickened, 5 minutes.

Toss the "chili" mixture with the pasta and transfer to a casserole dish. Add cheese to top and bake approx. 10 minutes or until cheese is bubbly.

Makes approx. 6 (1) cup servings.

    Used turkey instead of beef, and added a can of undrained diced tomatoes and some Worcestershire sauce. Super easy and really tasty. Thanks for sharing. - 3/5/10

    I really liked this recipe, but I think adding a bit more sauce or maybe some chili beans in sauce would make it amazing :) Also, it seemed like I had way more than 6 (1cup) servings, but I didn't measure. I will make this again - Thanks!! - 2/6/10

    I agree that it did make a LOT! With your advice I did add more beef stock and ketchup/mustard and we liked it a lot. My 2 year old even thought it was great!
