Ingredients

2 Tbsp Dijon or spicy brown mustard
2 Tbsp honey
4 (about 1 1/4 lbs total) chicken breast halves
1 Tbsp chopped fresh parsley or cilantro (optional)
1/2 tsp ground black pepper
Directions
Preheat oven to 400 F. Line baking sheet with foil; spray with nonfat cooking spray
Combine honey and mustard in small bowl. Place chicken on prepared baking sheet; sprinkle with pepper.
Bake for 15 min. Brush with honey-mustard mixture. Bake for 15-20 min more, brushing twice more with glaze. Sprinkle with parsley.
Serves 4
Good served with zucchini and whole wheat pasta
