Introduction

My wife and I love Wendy's Mandarin Salad. She is a diabetic so I had to come up with some thing she could eat. This tastes just as good with out all the sugar. Enjoy. Ingredients

    Sugar Free Apricot Jam, 0.5 cup (remove)
    white distilled vinegar, 8 tbsp (remove)
    pineapple Juice, 4 tbsp (remove)
    Rice Wine Vinegar, 2 tbsp (remove)
    *Soy Sauce Low Sodium, 2 tbsp (remove)
    Sesame Oil, 1 tbsp (remove)
    Splenda, 7 tbsp (remove)
    Splenda Brown Sugar, 2 tbsp (remove)
    Paprika, 1 tsp (remove)
    Pepper, black, .25 tsp (remove)
    *Skippy Reduced Fat Smooth Peanut Butter, 2 tbsp (remove)
    *Canola Oil, 1 cup (remove)




    Canned Chicken, 4 can (5 oz) (remove)
    Iceberg Lettuce (salad), 1 head, large (remove)
    Mandarin Orange Slices, 1 cup (remove)
    Dried Chow Mein Noodles, 2 cup (remove)
    Roasted Sliced Almonds, 1 cup (remove)
    *Sesame Seeds, 1 tbsp (remove)

Directions

1. Prepare dressing by combining first 13 items in blender.

2. Blend on medium speed. While blending, SLOWLY add cup of Canola oil to create an emulsion.

3. After completing emulsion, add sesame seeds and blend for two or three seconds.

4. Pour dressing into a covered container and chill.

5. Build each salad by dividing lettuce evenly in four (4) salad bowls.

6. Sprinkle bite size pieces of chicken over each salad.

7. Arrange four mandarin orange wedges on each salad. (you can eliminate to reduce more surgar content)

8. Add sesame dressing to each salad.

9. Sprinkle desired amount dried chow mein noodles and sliced almonds on top of each salad and serve.
