Introduction

Delicious, filling, easy to make and all from the pantry! AND low carb and low fat! Delicious, filling, easy to make and all from the pantry! AND low carb and low fat!
Number of Servings: 4

Ingredients

    1 large onion, chopped
    1 clove garlic, sliced or crushed
    2 diced carrots (or you can use 1/2 pkt frozen veg!)
    1 tin diced tomatoes (including juice)
    1 tin kidney beans (including juice)
    2 cups chicken stock
    1 tspn mixed herbs
    1/2 cup pasta shells
    1/2 bunch spinach, chopped (or you can use frozen!)

Directions

Makes at least 4 (big) bowls full.
Combine onion, garlic and carrots in a large pot and sweat for 10 minutes, stirring occaisonally.
Add Tomatoes, stock, herbs, (pepper if desired) and bring to the boil.
Add pasta and beans and cook 10 minutes.
Add spinach and cook for about 5 minutes more.
Serve with a bit of parmy cheese on top if you like!
