Ingredients

11/4 cups all-purpose flour
21/2 tsp baking powder
1/2 tsp salt
1 cup old fashioned oats
1/2 cup Splenda
1 cup milk
1/2 cup (1 stick) butter, melted
1 egg, beaten
1 tsp vanilla extract
1 cup fresh chopped strawberries
you can use frozen berries, any berries you like

Directions
1) Preheat oven to 425F, grease bottoms only of 12 standard (21/2 inc muffin cups, or line with paper baking cases: set aside
2) Combine flour, baking powder, and salt in a large bowl. Stir in oats and sugar. Combine melted butter, milk, beaten egg and vanilla in a small bowl until well blended, Stir in flour mixture until just moistened. Fold in Strawberries.
Spoon into prepared muffin cups, filling about 2/3rds full.
3) Bake 15 to 18 minutes or until lightly browned and toothpick inserted into centre comes out clean. Remove from pan, Cool on a wire rack 10 - 15mins. Serve warm or cool completely.
