Introduction

Using fresh herbs and garlic makes this a great light tasting pasta sauce. You can also add more vegetables such as green pepper, red pepper. Ingredients

    Ground Chicken - approximately 3/4 of a pound

    3 cloves of garlic - pressed or finely chopped
    1 onion finely chopped
    2 tbsp of olive oil
    3/4 of a can of Tomatoe paste
    On large can of Stewed Tomatoes - 28 oz1 Tbsp of Oregano
    Pesto - Basil based 1 Tbsp
    Splenda - 1 tsp
    Salt - to taste

Directions

In a frying pan - brown chicken until cooked

In a large pot heat olive oil on medium heat add onion and garlic and cook until soft but not brown.
Add Tomatoe Paste and cook for 1 minute
Add Stewed tomatoes and mash until there are small pieces
Add Splenda - stir
Simmer for 15 minutes
Add pesto and and blend - simmer for another 10 minutes
Add Salt & Pepper to taste

Serve over spaghetti, preferably whole wheat or for a less carbs serve over spaghetti squash.
