Ingredients

    1 pound boneless skinless chicken breasts cut into 1 inch pieces.
    1 garlic clove, minced
    3 tsp olive oil
    3 Tbsp honey
    2 Tbsp soy sauce
    1 pkg frozen stir fry vegetables
    2 tsp cornstarch
    1 tbsp cold water

Directions

In a large nonstick skillet or wok, stir fry chicken and garlic in olive oil. Add the honey, & soy sauce. Cook and stir until chicken is browned, and juices run clear. Remove and keep warm. In the same pan, stir fry the vegetables for 4-5 minutes or until heated through. Return chicken to the pan, and mix well. Combine cornstarch and cold water until smooth, and stir into the chicken mixture. Bring to a boil,and cook and stir for 1 minute or until thickened. Serve over rice.

    Very Good
    I thought this was a great "base" recipe! I used mostly fresh vegges I had in the fridge, but followed the rest as directed. Next time I will add some onion powder, garlic powder, and some HEAT. But We really did enjoy it. - 1/15/12
