Number of Servings: 2

Ingredients

    4 oz lean Pork Tenderloin, thin sliced
    2 teaspoons Canala or EVOO
    1 Cup sliced Onion
    1 Cup baby Zuchini
    1.5 Cup Sliced Tomatoes
    Louisina Cajun Seasoning (or your favorite seasoning that would cut down on the sodium)

Directions

Slice tenderloin thin and remove any fat. Add to frying pan with 2 tsp oil to brown. Add zuchini and onion. Add tomatoes and Cajun (or your favorite) seasoning. Cover and cook until done. Do not overcook.

Can be served over rice or with a baked potato, optional

Makes 2 Servings aprox. 1 1/2 Cup each
