Healthy, sweet, chewy oatmeal cookies, suitable for breakfast! Healthy, sweet, chewy oatmeal cookies, suitable for breakfast!

Ingredients

    2 cups old fashioned oatmeal
    1 cup of flour
    1 cup brown
    .5 cup granulated sugar
    2 cups chopped walnuts
    .75 cup of coconut oil
    1 large or 2 medium fresh eggs
    1 teaspoon vanilla
    2 cups craisins (dried cranberries)
    .5 teaspoon baking soda
    .25 cup water

Directions

Cream sugars, coconut oil, vanilla, eggs and water. In a separate bowl combine dry ingredients thoroughly; and add to sugar mixture until well combined. Prepare cookie sheet with non-stick spray; drop by rounded teaspoonful. Bake at 350 for 10 minutes or until light golden brown. Let stand 1 minute before removing to rack to cool. Makes 48 cookies. 1 serving = 1 cookie
