Introduction
I usually cook this on nights where I don't know what else to cook. You can add, or take away or otherwise alter whatever you want to make it uniquely yours. This is typically what I add to mine. Ingredients

1/4 cup shredded cheddar cheese
1 cup chopped fresh leaf spinach
1/4 cup (ish) chopped onion
1 large potato, cubed
1 1/4 cup egg beater
4 slices turkey bacon
1 tablespoon smart balance light butter
Optional ingredients:
- fresh parsley to taste
- salt/pepper
- Chicken sausage instead of turkey bacon or whatever
- My husband always adds chalula to his
- skim milk to make the eggs fluffier if you enjoy that kind of thing
- whatever else you'd rather eat/take away to make this more in the way of what you'd like to eat.
Directions
1. boil the potatoes. Drain potatoes when completely cooked.
2. Add butter to a heated skillet and add onions (white or red). Cook until they are see through. Add drained potatoes and chopped spinach let the onions and potatoes cook until the spinach is wilted. This usually takes a few minutes.
3. Add egg starts to the skillet, cook until they are done. Add spices and cheese. Crumble cooked bacon over the top.
Serve and enjoy.
We usually serve this with a piece of whole wheat toast. For two of us this makes enough leftovers for the following day (or two). Remember, this recipe is not gospel. Add, subtract and otherwise alter whatever you want. You really can't go wrong or mess up with this one. I usually just eyeball ingredients, as wel so feel free to take liberty when preparing this one!
