Introduction

no pasta, zucchini no pasta, zucchini
Number of Servings: 4

Ingredients

    1 c. chopped onion,
    2 cloves garlic, chopped
    1/4 chicken broth
    cook above ingredients until tender

    Brown following ingredients:
    1 lb. ground white turkey breast
    1 tbsp olive oil
    Add:
    1 14.5 oz can unsalted tomatoes, chopped
    1 8 oz tomato sauce, low sodium
    1 tsp dried oregano
    1 tsp dried basil
    1 tsp salt free herb seasoning
    black pepper and no salt seasoning to taste
    1/4 chopped parsley
    Cook turkey mixture 15-20 minutes

    1 cup non-fat cottage cheese
    3 cups sliced zucchini
    2 tbsp rice flour to sprinkle on zucchini

    Layer zucchini sprinkled with flour, cheese mixture and turkey mixture.

    1 tbsp parmesan to top

    Bake 30 minutes at 350 degrees



Directions

4 servings (probably 1 1/2 cups each)

I made it lower fat with the white 97% lean white turkey and low sodium or no sodium tomato products and broth that I couldn't find when adding the information on SP
