Introduction

Number of Servings: 10

Ingredients

    1/4 c. Olive oil
    1/2 c. chopped onion
    3 clove garlic, finely chopped
    2 tbsp. finely chopped parsley
    1 can (1 lb. 12 oz.) diced tomatoes, undrained
    2 cans (6 oz size) tomato paste
    2 tsp. Dried oregano leaves
    1 tsp. Dried basil leaves
    2 tsp. Salt
    1 tsp. Garlic powder
    1/4 tsp. Ground black pepper
    1/8 tsp. Cayenne

Directions

1. Sauté onion in oil until tender – about 5 minutes. Add onion and pasley and sauté another minute
2. Add rest of ingredients in order listed.
3. Add 1/2 c. water. Stir to mix well.
4. Bring to a boil. Reduce heat. Simmer uncovered 1 1/2 hours stirring occasionally.

Makes 12 1/2 c servings. Note: No salt added tomato paste and not adding the tsp of salt greatly lower the sodium amount.

    Incredible!
    So freaking amazing, I made it without onions because I and the rest of my siblings are are kinda picky eaters and I didn't have tomato paste so I subbed it for a can of condensed tomato soup. I had fresh parsley from my itsy-bitsy garden. Put it on top of ravioli, the tomatoes were so sweet. Yummm - 7/13/11
