Ingredients

Canola Oil
Onion (1 small, chopped)
Garlic (4 cloves, chopped)
Green Bell Pepper (1 small, chopped)
Mushroom (1 package, fresh, quartered)
Boneless, Skinless Chicken Thighs (2 lbs)
Low Sodium Crushed Tomatoes (1 can)
Red Pepper Flakes
Salt
Black Pepper
Oregano
Basil
Directions
Heat just a little canola oil in the bottom of a high sided pot. Add onions, garlic and a few dashes of red pepper flakes and saute until onions are translucent. (Do not brown / burn) Add chicken with a sprinkle of salt and black pepper to taste. Brown chicken slightly, then add cut up mushrooms and bell pepper, mix and season if necessary. Add 1 can of crushed tomatoes, sprinkle salt, black pepper, oregano and basil, and stir well to incorporate. Lower heat to medium and put a lid half over the pot (no completely or your sauce will be to watery). Cook for 25 minutes, then lower heat to simmer.
AFter you lower to simmer put on your pasta water. Use a big pot and lots of water so pasta doesn't stick and add a dash of salt to flavor the pasta. Cover the pot, water will boil faster. Once you have a good boil, add your pasta and set your kitchen timer to 9 minutes for a good al dente pasta that is not to soft.
Drain pasta, mix with sauce and serve.
